Create your own fresh masala blend and revel in the pleasure of preparing a delectable dish at home. I hope you all endeavor to try it and share the experience with friends and family. The key to good Paya soup is the initial simmering. If you have a pressure cooker, or instant pot you will reduce cooking time by a couple of hours. Without a pressure cooker, simmer for 3-4 hours with all the spices. Even though the preparation time is lengthy, the prepared dish is well worth it. Paya Masala Ingredients: Salt: 1 teaspoon or as per taste Red Chili Powder: 1 teaspoon or as per taste Coriander Powder: 1 tablespoon Small Cardamom: 2-3 pods Whole Black Pepper: 10-12 pieces Cinnamon Stick: 2-3 sticks Bay Leaf: 1 Turmeric: 1/4 teaspoon White Cumin Seeds: 1 tablespoon Cloves: 4-5 pieces Nutmeg/Mace: 1/4 teaspoon Kashmiri Laal Mirch: 1 tablespoon Notes The simmering time depends on the freshness of the legs. Frozen/older legs have a meaty smell which takes a long time to diminish. Adjust simmering time accordingly. Adjust water to the consistency you desire.
