Welcome to Xiao's Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes. Ingredients: 1 Hake Fish (1kg) 1 Tbsp Dark Soy Sauce 2 Tbsp Rice Wine 6 Cloves Garlic (thinly sliced) 40g Ginger (thinly sliced) 2 Spring Onions (roughly chopped) 1 Tbsp Rice Wine Vinegar Salt to Taste Method: 1. Make 3 slashes down each side of the fish 2. Heat 4 Tbsp oil in a wok, add the fish to the wok, fry for 3 minutes each side or until light brown 3. Add the rice wine, rice vinegar, soy sauce and salt 4. Add 500ml of water, then add garlic, ginger and half of the spring onion 5. Bring to the boil, cover the wok, reduce heat to medium and cook the fish for 30 minutes 6.
