Pineapples and Passion Fruits go very well together. Passion Fruits are very tart and Pineapples are so sweet so combined they make a wonderful Tropical Spread! Use on Toast or Plain Greek Yogurt or as a topping to desserts and ice creams. I like the seeds in mine but they can be strained out if preferred. If canned, the unopened jam lasts a year in a pantry. Once opened or if never canned in the canning pot it will last about 2 months in the refrigerator. I don't have an exact recipe for this jam but these are the measurements I generally follow for all my jams: Fruit (weigh the prepared fruit) Sugar 30%-40% of the weight in fruit Lemon Juice(I usually don't measure it but for a small batch like this I add a few tablespoons full. For bigger recipes I'll use up to half a cup) Bottled lemon juice is actually safer to use when canning because it's acidity levels are controlled, fresh lemons have different acidity levels based on the season,type of lemon or where it came from. But when using fresh lemons I just add Extra Extra Juice "just" in case :)
