Ingredients 2-3 medium sized Potatoes (Peeled & cut into small cubes) 150 grams Spinach (Cleaned & roughly chopped) 2 to 3 Medium sized Onion (Finely chopped) 1 tsp Cumin seeds 3 to 4 Garlic Cloves (Finely chopped) 1 tsp Ginger (Finely chopped) 1 to 2 medium sized Tomatoes (Diced) 1 tsp Red Chilli Powder 1 tsp Coriander Powder 1/2 tsp Cumin Powder 1/4th tsp Turmeric Powder 1/4th tsp Asafoetida (Hing) 1 tsp Tomato Puree 2 tbsp Olive oil 100 ml Water Coriander leaves (Garnish) Salt to taste Method In a non stick wok, heat 1 tbsp oil. Add the potato cubes and salt to taste. Fry till it turn golden brown (80 % cooked). Remove and keep it aside In the same wok, heat 1 tbsp oil and add cumin seeds. Once it splutters add the chopped garlic. Sauté for a minute. Add diced onion and sauté till it turns light brown. Now add the chopped ginger and sauté for a minute. Add tomatoes and fry till it turns soft and mushy. Now add the masalas- Red Chilli powder, coriander powder, cumin powder, turmeric powder, asafoetida, salt to taste (do not add more salt as we have added salt while frying the potatoes) and tomato puree. Mix well and sauté for 2 to 3 minutes on a low to medium flame. Add the chopped spinach and mix well. Now add the fried potatoes and 100ml water & mix well. Let it cook for 5 to 10 minutes.
