Pina Colada Cupcakes Ingredients: Cake Layer: 1 box of Pineapple cake mix 20 oz can of chopped pineapples 1 cup Pineapple Juice (from 20 oz can of chopped pineapple) 1/3 cup vegetable oil 4 eggs Toppings: Maraschino cherries Chopped Fresh Pineapple (with skin) 1 cup of sweetened flaked coconut Other: Cupcake pan Non-stick spray Jumbo Cupcake liners Paper Umbrellas ***Recipe makes 1 dozen cupcakes Directions: 1) Prepare Cake Mix: First whisk together wet ingredients (1 cup pineapple juice, 1/3 cup vegetable oil, 4 eggs). Then add cake mix to wet ingredients (sift to avoid clumps) and whisk together well. Next fold in 20 oz can of chopped pineapples 2) Preheat Oven to 350 degrees Farenheight. 3) Prepare Cake Pan: Line cupcake pan with cupcake liners. Spray cake liners with non-stick spray. Fill each cupcake liner up to 3/4 full with batter. Bake for 18-20 minutes until cupcakes are done. Cool cupcakes completely. 4) Assemble Cupcakes: Add frosting into piping bag, and add a layer of frosting around the cupcake edge. Dip the cupcake edges in coconut flakes all around, then add final layer of frosting to cupcakes. Add on maraschino cherry topping, pineapple topping, and finish with a paper umbrella, inserted on the side of cupcake. Bake and Eat it!
