Jo Cook is back with another delicious recipe filled with vegetables for you to enjoy. This week we celebrate zucchini's! INGREDIENTS (makes 12 fritters) 4 small to medium zucchinis, washed and grated Large handful of fresh mint Small bunch of fresh dill 150g of Danish or Greek feta 2 eggs 1/2 cup self-raising flour Pinch of salt Vegetable oil for frying METHOD Place the grated zucchini in a colander and squeeze to remove as much liquid as possible. Wash and dry the mint and dill, roughly chop them and set aside. Give the zucchini a final squeeze and then put it into a large bowl. Crumble the feta into the bowl with the zucchini. Add two eggs and stir gently to combine. Add the self-raising flour, chopped herbs and a pinch of salt. Fold the mix gently until the mix is just combined. Heat a frying pan over low-medium heat with 1cm vegetable oil. When the oil is hot, gently place a heaped dessertspoon of fritter batter into the pan. Fry until golden, on both sides, then drain on paper towel. Serve with natural yoghurt and salad.
