Lemongrass Pandan Tea Hot/Cold Nam Takrai Bai Teoy น้ำตะไคร้ใบเตย

The basic version of this tea is to boil, water, sugar, pandan leaves and lemongrass together.. like how we normally boil leong cha.. but to make it a little bit fancy I did a little trick.. but the down part of this is that there will be slight bitter taste at the end, as pandan somehow is bitter but it doesnt affect much on the drinks. Just make sure that you choose the greenest part of the pandan. The recipe is basically sugar, pandan leaves, lemongrass and water.. u can spice it up with ginger if you like. For the sugar ratio i normally use 2:1 which is 2 portion water and 1 portion sugar. This recipe i use 200gm water and 100gm sugar. Adjust accordingly to the sweetness that you prefer. Ingredients: Pandan Sugar Syrup 5-6 leaves of pandan leaves 100gm sugar 200ml water .. a little bit extra to top up if needed to. 1. Blend pandan leaves with water and strain out 200ml pandan juice. 2. Boil 200ml pandan juice with 100gm sugar. It doesnt need to be boiling as long as the sugar dissolves. Set aside. Lemongrass tea 5 lemongrass 1.5l water Ginger (optional) 1. Bruise the lemongrass. 2. Boil the lemongrass together with the water. Add in ginger (optional). Boil for about 10-15mins. Set aside. Lemongrass Pandan Tea Pandan sugar syrup Lemongrass tea Hot: Add pandan sugar syrup and lemongrass tea together in a cup. Adjust sweetness accordingly. Garnish with lemongrass. Cold: Add pandan sugar syrup, ice cubes and lemongrass tea together in a glass/mason jar. Adjust sweetness accordingly. Garnish with lemongrass. Refreshing drinks for the summer for sure.
