Basically, its the same concept of dolma but not having to roll up any grape leafs or stuff other veggies, therefore you get all the flavor and save some time by not rolling a hundred grape leaves. I come from a middle eastern background, so dolma is a dish that my mother and grandmother would make all time growing up. However, as I got older and have a family of my own dolma, is one dish that is to time consuming so I totally understand why my mom made it this way. By layering it instead of rolling it the traditional way, saves me a lot of time and cleaning without losing any of the wonderful flavors from the traditional way. As far as the origins of this dish well, I'm not too sure but I would diffidently say Mediterranean. I know that Greeks make it, Turks, Iranians, and Iraqis; If anyone knows please feel free to chime in and leave a comment. Now for the spices one specifically “Baharat” is a Middle Eastern 7 spice blend. The blend consists of black pepper, cumin, coriander, cardamom, cloves, nutmeg, and cinnamon. You can find this in any middle eastern store near you or blend it yourself. I had a hard time with getting the correct cook time for this dish because I got a new counter top burner and the pot was a lot larger than I expected. So I had it cooking for an additional 30-40 min to the time I had mentioned in the video. So you will have to feel out your pot and stove top to get the time right. Key point you want your veggies and rice to be cooked well and all the way through. I do like it more sour and spicy then most people so off camera I add more lemon and cayenne pepper.
