Prepare the sponge • In a heatproof bowl, combine honey, sugar, and butter. Heat gently over a double boiler until melted and smooth. • Add baking soda and whisk until slightly foamy. • Let cool a little, then whisk in the eggs and heavy cream. • Sift in the flour with salt and fold gently until smooth. 2. Bake the sponge • Preheat oven to 180°C (350°F). • Line a large baking tray (30×40 cm) with parchment paper. • Spread the batter evenly across the tray. • Bake for 10–12 minutes, until golden and springy to the touch. • Let it cool completely. 3. Assemble the mini cakes • Place one sponge circle as the base. • Pipe or spread a layer of mascarpone cream on top. • Add a second sponge circle and more cream. • Finish with another layer of cream on top. 6. Decorate • Sprinkle with cake crumbs for crunch. • Garnish each mini cake with half a fresh strawberry. 7.
