In a large pan, heat oil and 3 tablespoons of butter. When the butter is melted add chopped onion and sauté for 3-4 minutes. 2. Add mushrooms and cook until golden and crisp, about 10 minutes. 3. Pour in wine, and cook until reduced and alcohol has evaporated, about 3 minutes. 4. Add garlic and cook until, stirring, for about 3-4 minutes. 5. Season with salt and pepper to taste. 6.
