Well this tart is inspired from The Great British Bake Off. It's David's fancy custard tart with blackberries from another season. If I remember right is was lemon custard with blackberry curd. I made the blackberry curd and found it unimpressive. It's better with the blackberry preserves because when married with David's custard tart, which is so unsweet it's a match made in heaven Anyway everyone agrees this is the best thing since I started making quiche bars and I don't disagree. Tart Shell Mix together 2/3 cup butter, 3 tablespoons sugar, 3 tablespoons almond flour and 1/4 teaspoon salt. Next add 2 egg yolks and 1 tablespoon milk. Mix until sloppy and then add 1 cup flour. Combine until just coming together and chill over night. Roll dough out and spread over the tart tin. Form a nice even crust, line with wax paper and fill with pie weights. Bake at 350°F for 14 minutes. Custard Heat 600ml cream. Mix in a bowl 35g sugar, 15g brown sugar and 5 egg yolks. Add 1 teaspoon vanilla and then the warm cream. Whisk until all incorporated and pour into the tart shell. Bake at 350°F for 25 minutes. Cool the tart before spreading the top with 3/4 cup blackberry preserves. Add fresh blackberries and serve. Keep refrigerated.
