All Time Favorite Pineapple Roll Tarts Using Pizza Cutter

Pineapple Rolled Tarts is an all-time favorite during Chinese New Year festival besides the famous Pineapple Tarts. It’s also a must have delicacy during any festival season in multicultural Malaysia. Ingredients for approximately 70-80 pcs of Pineapple Roll Tarts: 350gm All-purpose flour 250gm Butter(room temperature) 1 tbsp Corn flour 4 Gred A eggs(2 for preparing dough, 2 for glazing) 1 ½ tsp Vanilla Essence 1 tsp Salt 560gm Pineapple Jam Preparations Pineapple Jam Filling: • Please refer to Pineapple Jam making video. • Divide pineapple jam to 7gm each. • Roll it into an inch & keep aside. Dough: • Substitute 1 tbsp flour as we going to add 1 tbsp corn flour. • Sieve flour & corn flour, leave aside • Cream butter & salt till fluffy. • Add 2 eggs yolk, 1 egg white into a bowl & add vanilla essence, then lightly beat it. Once done add mix into creamed butter & beat for a short while. • Gradually add in flour, knead till mixture become soft dough. • Rest 25-30 mins. Eggs for Glazing • Beat 2 eggs yolk &½ egg white. Making the roll tarts: • Fill some dough into the cookie pump till compact, fix piston. • Slowly push & drag the strips along the workstation till pump is empty, continue till there are a few strips. • Divide the strips into equal length matching the size of the jam filling, place the jam filling near the edge of the divided strips. • Roll till end meet and place on a greased baking tray. • Once tray is fully filled, start glazing on the tarts surface only. • Bake in pre-heated oven with temperature 170 – 180 degree Celsius for 22-25 mins or till golden brown. • Remove and leave to cool down before serving.
