Transcript (automated): Are you getting a lot of conflicting information on decoction mashing? Is it really a necessity to get the right flavor and is all that extra hard work for decoction worth it? Well, I asked that question to two world-renown experts and their insights were quite intriguing be sure to stay to the end, to hear decoctions impact on the mouthfeel. Now, this was part of a longer event we're discussing best practices and demystifying logging as a whole. Dr. Charlie Bamforth You talked about decoction a number of people who asked me about decoction. And of course, there's another of my sort of pet peeves. Decoction started really as a process to deal with poorly modified malt. And these are the days before temperature, before thermometers, and before anybody knew about enzymes, and they just, they were great brewers. So they worked out how to progressively raise the temperature to make sure they dealt with things like the beta-glucans, and yet then went to a high enough temperature to deal with the starch. But of course, nobody had a vessel in those days where you can actually change the temperature inside a single vessel. So people say to me, you've got to, you've got to do decoction mashing to make a certain type of product.. And I guess you could talk about all the different flavor changes, which are taking place during heating. And some of those are going to be Maillard reactions. Yeah. There's gotta be some chemistry, but could you make kind of, can you make a lager without decoction mashing and just do a temperature ramped mash in a single vessel. Of course, you can. Of course, you can. The biggest selling brand of beer in the UK does it that way. You don't have to do decoction mashing. But, they've been doing it for so long. It's part of their process. So if they change it now, it's going to take you away from that process. And yeah, if there is anything in there, prolonged storage in wooden vessels, I guess that's part of the process now. But if you are, if somebody is listening in to say, I want to make a lager. Yeah. Well then, so forget that. You have to do anything like decoction mashing or forget that you've got to have prolonged storage, just do it. And the way that you can faithfully reproduce. The last word of a decoction mashing myth. Jens Magnus Eiken I've never done the three decoctions in my life. Like they do in, I did one-time decoction as you say, in spring mash fafahone, as you're saying German, that's mostly to produce a beer with more mouthfeel. So I would say there's something to it. It depends on what you want to do and what the specification is, which should be in the final beer. Yeah. So if you need it or not, it depends on what you want to create. And I think that at least one decoction can do it all,, if you need to do it. And of course, it depends on your brewhouse equipment as well, maybe one way to also on foam. But I think it's more to do with the brewer and the process in the end, what you want to accomplish. This was just one clip from the entire replay.
