FOR EDUCATIONAL PURPOSE Fruits are important source of nutrients. Bananas are one of these fruits. We use Bananas in Banana smoothies, desserts, pancakes, banana muffins and cakes. But did we ever realize “WHY DO BANANAS TURN DARK WITHIN SHORT PERIOD OF TIME?” So here are some top three factors that contribute to over-ripening of the Banana. 1. Oxidization of the Polyphenols Polyphenols are the polymers that work similarly like the melanin that darkens the skin color of the humans except the conversion process of Melanin is a way slower than conversion process of polyphenols in the bananas. Polyphenols are the enzymes that work faster in the cold temperatures to accelerate the ripening of the bananas. Basically polyphenols are present in the banana plants to protect them from insects and harmful UV rays. 2. Production of Ethylene hormones Green bananas usually contain gaseous hormone called Ethylene. An acid is formed when Ethylene gas reacts with the banana. The acid breaks down the green pigment of the banana into yellow and makes the banana softer. In fact, ethylene gas is present in the street lights, so the gases released by the street lights increases the ripening process of nearby plants. 3. Cold temperature Cold temperature will stop the enzymatic reactions and the rate of production of Ethylene will be hastened to darken the banana. Ethylene decides the texture, softness, color and flavor of the Banana. Therefore bananas should be stored not lesser than 10 degree Celsius and not greater than 38 degree Celsius. Frost will cause chilling of the bananas yellow skin into dark skin. Here is the special tip to avoid bruising of the bananas: Coat the banana with lemon juice to prevent the reaction with oxygen and other gases.
