Here is how I collected all 8 red coins in the Waterpark. I used I frames for the first coin cus I sure was not doing that Yoshi method. If you use Dolphin, modify your game config to add these: [Core] Overclock = 1.5 OverclockEnable = True This will overclock the game and reduce lag in the laggy areas.
