These cracker "brownies" are delicious and are not super sweet. They are best served cold as they hold their shape the best that way. Brownie playlist: • Brownie Recipes 3/4 cup vegetable shortening 1 cup granulated sugar 2 large eggs 1 tsp vanilla extract 2 1/2 cups crushed honey graham crackers 2 cups miniature marshmallows 1/4 cup peanuts, chopped fine Topping: 1 cup semisweet chocolate chips 1/4 cup peanut butter In the top of a double boiler melt the vegetable shortening with the sugar. Stir to dissolve the sugar (it won't completely dissolve, but most of it will) Remove from the heat and beat in the eggs one at a time and then beat in the vanilla. Return to heat and cook, stirring until the mixture thickens. Remove from the heat and stir in the marshmallows until melted and then stir in the graham crackers and peanuts. Spread mixture evenly into the bottom of a greased 9x9" or 8x11" pan. Melt the topping ingredients together in a double boiler over low heat or in the microwave and pour over the base layer. Spread out gently until smooth. Refrigerate until firm (3-4 hours or overnight).
