My husband grew up eating a version of Ambrosia, a fruit salad with canned mandarins, canned pineapple, coconut, marshmallows and sour cream (some people use Cool Whip.) Every few years he would tweak the recipe and give it an upgrade. Canned fruit became fresh fruit; new fruits were swapped in; and sour cream became Greek yogurt. Here’s my plant-based version and it is shockingly delicious!! 2-3 cups of fresh fruit cut into bite size pieces. The fruit we love the most: segmented oranges, halved grapes, diced apple, chopped fresh strawberries, sliced banana and pineapple. ½ cup shredded unsweetened coconut (I used thick coconut flakes, but thin shreds are better.) ¾ cup mini vegan marshmallows (I used Dandies) 1 cup unsweetened coconut yogurt Mix everything together in a bowl and refrigerate until chilled. Depending on which fruits you use, this can last for up to 2 days in the fridge. #shorts #husband #cooking #summer
