SunHawk Farms: The Art of Lavender Distillation

On June 30, 2013, John Schaeffer and Nantzy Hensley of SunHawk Farms in Hopland, California, harvested their biodynamic crop of lavender flowers. East German Stefan Fitzer of Old Tree Essentials, an artist-distiller of essential oils, distilled the flowers into hydrosol and the essential oil of lavender on-site. Stefan describes his intuitive process of capturing the essence of the flowers: "I distill plants to explore and deepen my relationship with nature, while expressing my gratitude for the natural elements all around me." 2013 promises to be a vintage year for SunHawk Farms' lavender oil. The entirely off-the-grid farm in Mendocino County also produces wine grapes, and olives for a delicious extra virgin olive oil.
