Fat Thursday or Fat Tuesday, definitely Thursday!! You won’t find anything close to these at the bakery. Get together with friends and family, make these at home and you will have excuse to eat these delicious treats. Smacznego! Ingredients 460 grams Flour 60 grams Yeast 8 Egg Yolks 1 cup or 225 grams Warm Milk (90°F) 50 grams Sugar 100 grams Melted Butter 1 tsp Vanilla Extract 1 shot Spirytus 250 grams Cherries, drained 1/2 cup Powdered Sugar (for sprinkling) Lard or oil for frying Directions 1. Combine yeast, 20g sugar, 1/3 of the flour, and warm milk; let rise for 15-20 mins. 2. Beat egg yolks with 30g sugar until fluffy using an electric beater. 3. Mix risen starter with beaten egg yolks, spiritus, vanilla, and remaining flour in an electric mixer with a hook attachment. Slowly add melted butter until smooth and well-kneaded. Let dough rest for 1-2 hours. 4. Shape paczki by scooping dough, adding cherries, and rolling into rounds. Alternatively, roll out larger portions, use a circle stencil, add cherries, seal, and let rise for 30 mins. 5. Heat lard or oil to 325°F. Test readiness with a small dough piece. Fry paczki for 2 mins each side, then 1 min, 1 min, and 1 more min. Drain excess oil and sprinkle with powdered sugar.. 6. Serve warm. Smacznego!
