You love #cockle ?? #curry ?? #vegetable ?? Haha today i will show you how to cook curry vegetable with cockle!! 2 way can be done for this, salted fish curry or vegan curry. Just skip salted fish or cockle and it will become vegan curry. Ingredients for this curry.. 250g curry past, 300g coconut milk, 1kg cockle, 5x shallot, 2 stalks lemongrass, 300g fresh mushroom, 1 eggplant,15 stalks of long green bean, 3 tomato, 100g of tafu puff, 2 tea spoon salt, 2 table spoon sugar 500ml water, Ready to cook... Add 3 scoop of cooking oil in cold pot then turn on fire, avoid damage the pot, stir fried the shallot once oil is boil. Then add in the curry paste, stir fried it till the aroma is bloom. Then add the solid or hard vegetable like long bean and carrot.. stir fried it make sure all curry past covered. Add in 500 ml of water n boil it for 5mins, next you add in the soft or easy cooked vegetable like fresh mushroom, tomato and eggplant. Stir it The tafu puff can add in. Together with the salt and sugar. After that.. the cockle add in. After boil, coconut milk add in and boil it for 5mins. Make sure the coconut milk aroma is out. Then is complete. Ops... add the lemongrass after the shallot. Lol!! Ready to serve.... Yump yump.. try your self.. i really dunno how to express the taste.. so good the coconut milk combine with the curry paste. Optional ... You may use potato, or other vegetable to substitute it. Also the cockle you may substitute with shrimp or sotong or fish. If you do not have it then cook with vegetables , and become vegan dish. The curry paste you can get from fresh market. Just ask for veg curry paste. Thanks for watching.
