I thought with St. Patrick's Day coming up soon I would share this recipe I did 4 years ago. It was really good. ⬇️ Recipe below ⬇️ I am not a Chef just a Home Cook. I make simple and easy recipes. I grew up on garden food and southern home cooking. I will be sharing some recipes that my Momma made and other family recipes and things I made for my family when my kids were growing up. I also look for new things to make online or recipe books and will make it and give it a try. Irish Beef Pot Roast Recipe Ingredients 2 to 4 lbs beef roast 16 oz dark stout beer (Guinness recommended) 2 tbsp cooking oil 1/3 cup all‑purpose flour 1 large onion, diced 1 tbsp minced garlic 2 cups beef broth 1/4 cup tomato paste (from a 6 oz can) Salt and pepper to taste 2 pinches of cayenne pepper 1 tsp thyme or rosemary 1/2 to 1 lb baby carrots 1 small bag of Yukon Gold baby potatoes Slurry 2 tbsp water 2 tbsp cornstarch Directions Preheat the oven to 275°F. Rub the roast with the dry seasonings. Place the flour in a storage bag, add the roast, and shake to coat. Heat the oil in a skillet over medium‑high heat, then sear the roast on all sides for about 4 minutes or until browned. Remove the roast and set it on a plate. Add the onions and garlic to the skillet and cook until just softened. In a large Dutch oven or casserole dish, place the potatoes and carrots on the bottom. Set the roast on top, then spoon the onion‑garlic mixture over the roast. Pour the beef broth and beer around the roast. Add the tomato paste around the roast as well. Cook for 2 hours on the low rack. Stir the liquid, add the slurry, and stir again. Continue cooking for an additional 2 to 3 hours, or until the roast and vegetables are tender.
