DELICIOUS Chinese Pork Chop Rice (ft. my Chinese Grandma)

Today we are making my popo's version of Pork Chop Rice. A deconstructed version. The recipe below (rough measurements): 3 Pork Chops (deboned) Cajun seasoning 1 egg white 1 tablespoon cornstarch Pork Chop Brining Mixture: 1 1/2 cup of water 6 tsp sugar 4 tsp salt Stir-Fried Celery: Chopped celery Soy sauce Tomato Sauce: 2 cloves of garlic 2 fresh tomatoes cubed 1/2 cup of tomato sauce Oyster sauce Soy sauce 1 tsp sugar Corn starch (adjust the amount to your desired consistency) Chopped scallions Procedure: Pork Chops: Brining is submerging meat into a liquid which is simply, salted water. The meat absorbs the liquid, resulting in a more flavorful, tender piece of meat. This works well with chicken, and other lean cuts of meat. We brined the deboned pork chops for two days. Then we removed them from the liquid and pat them dry. Let the pork chops rest and dry before cooking. We let them rest for one day but you can let rest for 15-30 min. Then pound the pork chops and cut them into small pieces. Then put in a bowl and add some cajun seasoning, 1 egg white, and 1 tablespoon of corn starch. Then in a pan with some corn oil, we pan-fried the pork chops on both sides. After they browned, we transferred them to the oven where they were cooked on medium heat for 15-20 min. Stir-Fried Celery Cut celery then stir fry and add some soy sauce. You can just add salt and pepper. Tomato Sauce: Stir fry the garlic in oil, Then add the diced fresh tomatoes. After sauteing for a min, add the tomato sauce with the sugar, oyster sauce, soy sauce. Next, we added some corn starch to thicken the sauce. The dish is finished with chopped fresh scallions. Serve with some white rice or fried rice. Everything is on the side, so you can eat it as you please. I like to add some tomato sauce on the rice and eat the pork chop with some tomato sauce as well.
