Homemade Cannoli Ingredients For the shells: 2 cups all-purpose flour, plus additional for rolling 1 Tbsp sugar 1/4 tsp salt 1/4 tsp ground cinnamon 2 Tbsp vegetable shortening 2 eggs, divided 1/2 cup white wine For the filling: 2 cups whole milk ricotta, drained 1 cup mascarpone 1 cup powdered sugar 1/4 tsp ground cinnamon 3/4 cup mini semi-sweet chocolate chips Instructions For the shells: Add the flour, sugar, salt, cinnamon, shortening, one egg, and wine to the bowl of a stand mixer fitted with the hook attachment. Mix on medium-low speed until well combined and a smooth dough forms. Wrap the dough in plastic wrap and let sit at room temperature for 30 minutes. Turn the dough out onto a lightly floured surface and roll out as thin as you can, about 1/8 inch thick. Using a 4 or 5 inch cookie cutter cut circles out of the dough. In a small bowl whisk the remaining egg. Fill a wide pot or skillet 2/3 of the way full with canola oil and heat over medium heat until the oil reaches 350 degrees. Wrap a dough circle loosely around a cannoli tube. Use your finger or pastry brush to lightly brush one end of the shell with the egg wash. Pull the egg brushed end over the other end and press together to seal. Carefully lower a few tubes into the oil and fry, turning occasionally, until the shells are golden brown. Transfer to a cooling rack to drain. Carefully pull the tubes out when cool. For the filling: Add the ricotta, mascarpone, powdered sugar and cinnamon to a bowl and mix until smooth. Stir in the chocolate chips. Put in a ziplock bag or piping bag. For assembly: When ready to fill and serve the cannolis, cut the corner or tip of bag the filling is inside. Carefully insert the tip halfway into the shell and pipe the filling until shell is completely full.
