In a bowl, whisk together the flour, baking powder, sugar, and salt. 2. Add the egg, milk, and vanilla. Whisk until just combined and smooth (no longer than 30 seconds). 3. Heat a non-stick skillet on medium heat (medium-high if your stove is weak). Melt about 1/2 tsp butter, swirl to coat, then wipe most off with a paper towel. 4. Pour 1/4 cup of batter into the pan. Spread lightly (or use the back of a scoop) into a 4.5” / 11cm circle. 5. Cook until bubbles appear on the surface, then flip and cook until golden. 6. Keep pancakes warm in a low oven while you cook the rest. 7. Add more butter every 2–3 pancakes as needed. 8.
