Black Bean Brownie Bites From: Plant-based Wellness Cookbook https://amzn.to/2M7CMbB Ingredients: 1 can (15oz) black beans, rinsed and drained 3 large flaxseed eggs ( 3 tbsp ground flax mixed with 9 tbsp water) 3/4 cup cacao powder 1 tsp pure vanilla extract 1/2 cup chopped dates (about 6 large dates) 1 tsp baking powder Directions: 1. Preheat oven to 350 degrees 2. Line a muffin pan with parchment paper or use a silicone muffin pan 3. Prepare flaxseed and water in bowl of the food processor. Pulse to combine and then let rest for a minutes to thicken. 4. Add remaining ingredients to the food processor bowl and puree for about 3 minutes, scrapping down the sides as needed, until smooth. 5. If the batter appears too thick, add a tablespoon of water at a time and pulse again. The batter should be thinner than frosting, but not runny. 6. Pour batter evenly into muffin cups and smooth the top with spoon. 7. Bake 20-26 minutes or until the tops are dry and edges start to pull away from sides. 8.
