I have pickled beets and pickled carrots. Beets are super great for you they are loaded full of vitamins and great for high blood pressure as you get older. The carrots are a nice addition to holiday meals.There are many ways that I prep our pantry not relying on one method is a great way to extend our harvest. Pickling recipe for beets 3 cups water 4 cups of vinegar i use both apple cider and white 3 cups of sugar boil 10 minutes add spices I like to use frozen garlic and onions, turmeric, dill, fennel, pickling spice in mine lots of peppercorns and little salt and don't forget to use cinnamon sticks and sliced apple . Adjust ingredient amounts based on how much you are pickling. For the carrots I add the same except for not as much sugar to keep them crisp only 1 cup.
