This pork belly slider recipe includes homemade rub, sauce and slaw dressing, piled up on Hawaiian sweet rolls! Flavor overload! Pork Belly Burnt Ends (Sliders) Prep Time 30 minutes Cook Time: 5.5 hours Ingredients 1 skinless pork belly, 8-9 pounds, cubed into 2” squares. Dry Rub ¼ cup coarse ground black pepper 2 tablespoons brown sugar 2 tablespoons white sugar 1 ½ teaspoon kosher or sea salt 2 teaspoons onion powder 2 teaspoons garlic powder 2 teaspoons mustard powder 2 teaspoons chili powder 1 teaspoon ground allspice 1 teaspoon paprika Prep. Mix the ingredients together in a bowl. BBQ Glaze 1 16-ounce bottle of Karo Syrup 1 cup water 1 tablespoon pickling spice 1 pinch of cayenne pepper Instructions 1. Place water and pickling spice in a pan and bring to a bowl. Simmer until about ½ cup of the water is boiled out. Set aside. 2. Add a 16-ounce bottle of Karo syrup to pan over medium heat. 3. Add pickling spice, water mixture 4. Add one pinch of cayenne pepper and bring to a boil. 5. Reduce heat and simmer until the sauce thickens. 6. Set aside and allow to cool prior to using. Coleslaw Dressing ½ cup mayonnaise 2 tablespoons white sugar 1 ½ tablespoon fresh lemon juice 1 tablespoon apple cider vinegar ½ teaspoon celery seed ½ teaspoon ground black pepper ¼ teaspoon salt Prep. Mix ingredients together in a bowl. Cooking instructions for pork belly burnt ends 1. Preheat smoker or grill to 250ºF – 260ºF. 2. Apply a liberal coating of dry rub to pork cubes, on cooking rack. 3. Place pork in the smoker and cook for 3 hours. 4. After 3 hours have passed, remove pork from the smoker and place in an aluminum cooking pan. 5. Sprinkle on the brown sugar (about ¼ cup), drizzle with agave nectar (or honey), then apply about 2 tablespoons of butter to the top of the pork. 6. Seal pan tightly with aluminum foil and place back in cooker for 1 ½ hours (until tender). 7. After the 1 ½ hours have passed, remove pork from the cooker and transfer it into a fresh aluminum pan. 8. Drizzle about ½ cup of the glaze over the pork, and toss with your hands or tongs to coat. Return to the cooker for 5-10 minutes to “set” the glaze. 9. After the five minutes have passed, remove pork from the cooker and allow it to rest for about 15 minutes before serving.
