In this video, I’ll show you how to make Kamatama Udon—a quick and comforting Japanese noodle bowl made with hot udon, a soft-boiled egg, and a drizzle of savory dashi-based soy sauce. In Japan, this dish is often topped with a raw egg, but I’ll be using a soft-boiled egg instead—it’s just as delicious and perfect for those who prefer their eggs cooked! 📝 Full instructions are in the video—watch ‘til the end to see how it all comes together! Don’t forget to like, comment, and subscribe for more cozy Japanese home cooking 💛 📌 what you need: serving:1 bowl Udon noodles (frozen or dried) 1 Soft-boiled egg 1 teaspoon Shirodashi sauce (Yamaki Kappo Shirodashi in the video) 2 teaspoons hot water Toppings: green onions, sesame seeds, nori, grated ginger tempura, tenkasu tempura crumbs, etc... ⚠️ If you can't find shirodashi, here are some alternatives: 1. Simple Mentsuyu-style sauce: In a microwave-safe bowl, mix: 100ml water 1/4 tsp + 1/8 tsp dashi powder 1.5 tbsp soy sauce 1.5 tbsp mirin Microwave on high for 1 minute, or simmer in a saucepan for 1 minute. This makes enough for 4–5 bowls. Add about 3–4 tsp per bowl of udon (or to taste). 2. Quick soy sauce option: Mix 1 tbsp soy sauce with a pinch or two of sugar. Add it little by little (about 1/8 tsp at a time) until the flavor feels just right. If you have bonito flakes, sprinkle some on top—they’ll add a nice dashi-like flavor!
