Flavor development in meads. It's a topic of much debate, with many arguing that small batch, untainted honey is far superior to inexpensive wholesale honey blends that come from all over the world. But beyond anecdote, there isn't much science accessible on the topic. We wanted to put an expensive and delicious farm honey up against a mass-market restaurant honey bucket to see how they stack up.
