Hey Friend, We are cooking up a storm in the kitchen today! I'm testing 4 scratch made recipes for the holidays. These Homemade side dishes turned out so delicious, I'm sure they'd leave your guests raving about them! On the Menu for today is Prosciutto, Brie and Puff Pastry Wrapped Asparagus, Au Gratin Mashed Potatoes, Honey Cinnamon Glazed Roast Carrots and Cranberry/Raspberries Sauce for the Turkey. Thanks for Hanging out, Kelsey Today's Recipes Stuffed Puff Pastry 1 pkg puff pastry 4 tbsp salted butter 2 Tbsp honey cheese of choice, I used Brie and Gruyere Asparagus or fresh green beans prosciutto or other prepared meat egg wash salt honey to drizzle Bake at 400 for 15 - 20 minutes Honey Glazed Carrots 1 lbs carrots, peeled and cut into equal long pieces 2 tbsp olive oil 1/3 cup honey 1 clove minced garlic 1/2-1 tsp paprika 1/2 -1 tsp cinnamon 1/4 tsp cumin 1 tsp salt dash pepper Roast at 425 for 25 minutes, tossing half way. Broil for 5 minutes keeping a close eye. Au Gratin Mashed Potatoes Mash 3 lbs potatoes, boiled til soft 1 tsp salt 6 tbsp butter 2/3 cup heavy cream 1 and 1/2 cups sharp white cheddar salt and pepper to taste Gratin 3 potatoes halved and then sliced thin into half moons 2 tbsp melted butter 1/4 cup grated parm 1 clove garlic, minced salt and pepper to taste after baking, covered, for 20 minutes at 400 add 1/4 cup grated parm to top and bake for another 30-40 minutes. Broil if desired for a crispy brown top. Cran Raspberry sauce 1 bag cranberries 1.5 cups raspberries 1/2 cup orange juice 1/2 cup water 2 tsbp vanilla splash of bourbon if desired spice it up with orange zest and a cinnamon stick if desired. bring to a boil and then simmer until nice and thick.
