I'm talking about a unique variety of kale that I absolutely LOVE. You won't see it at the grocery store, but it's easy to grow and delicious. This variety IS from Ethiopia. We were gifted this seed from a friend, and it quickly become one of our favorites. You'll notice right away that it looks different from most other kales. The big leaves have a shine to them, and it looks more like a mustard leaf. But the best part? The flavor! It has some umami to it that some people might find a little strong when eaten raw, but you can cook it too. It's a prolific grower here in San Diego, but we eat as much of it as we can! It brings some meatiness to dishes, and we use it often. The plants hold up nicely during hot days, and we rarely have any issues with pests. If you're in a warm climate, this is one of the best green options out there. It can get fairly tall, and the flavor doesn't change much until the plant is about to flower. You can grow it like any cool-season crop and plant it during the fall or winter. One of the best parts, though, is that it will continue to grow even during the summer when some other greens will either wilt or bolt. Because Ethiopian Kale takes a year to go to seed, you'll be able to enjoy fresh greens for a long time! They're easy to get started too! You can either direct sow or start them in cells.
