Pineapple cookies originated from Taiwan, with a jammy pineapple filling encased in a tender short crust pastry. In my opinion, it fall somewhere between a pineapple jam filled cookie and pineapple tart.I've been searching for a long time for a Taiwanese Pineapple cookies recipe that doesn't use custard powder. Why did I choose this recipe? The first thing is that I don't have custard powder :P and more importantly I think natural is better than artificial. Let's make it and find out my mistakes !
