Beef steak -1un. Bay leaf -3un. Garlic cloves -2 tbsp. Vinegar -150ml. Demi-glace -150ml. White wine -1un. Ham slice -1tbsp. Butter Q.b. Salt Q.b. Ground black pepper -3un. Sweet potatoes -1un. Thyme branch -2un. Garlic cloves Method: In a frying pan place a drizzle of olive oil and lightly fry the ham, then reserve. In the same frying pan put the beef steak, put the garlic and the bay leaf. When the steak has been sealed on both sides, remove the steak to rest and cool the pan with white wine. Let the alcohol evaporate and add the butter, when the butter is dissolved, add the demi-glace and let the sauce to emulsify. Put the steak back in the pan and cook for 2 to 3 minutes. Finally, add the vinegar and it is ready to serve. For the sweet potatoes, in the frying pan, put a drizzle of olive oil, garlic and thyme and add the sliced potatoes and let them fry over medium heat for 10 to 15 minutes.
