Kesar Pista Shrikhand - Shrikhand is an Indian dessert that is made with yogurt, saffron, cardomom and nuts. You can eat this as it is or with puri (for best taste) during any festivals or fasting days. Serving: 2-3 people Total time: 30-35 mins Ingredients: 2 cups yogurt (greek plain yogurt or homemade) 1 cup powdered or castor sugar 2 tbsp milk (to make kesar milk) saffron (kesar) 1/4 cup almonds, diced (optional) 1/4 cup pistachios, diced and powder 2-3 tsp cardomom powder (elaichi) Steps: Take a strainer with muslin/cheese cloth. Remember to place a dish or bowl below the strainer. Add yogurt to the muslin/cheese cloth. Tie the cheese cloth and remove excess water by pressing from outside. Then place heavy object like a mortar pestle on top of the yogurt and let it sit for 30 minutes (If using homemade yogurt, you are going to strain water for at least 24 hours for better results). After 30 minutes, you will see some whey collected in the dish that you can discard. Transfer the yogurt from the cheese cloth into a bowl. Add powdered sugar and cardamom powder to the yogurt and mix well until its all combined. Add in saffron infused milk (kesar milk) 2-3 tablespoon at a time and mix well until it reaches the color consistency you like (I like a darker yellow shade so added about 4 tablespoon of kesar milk). Add in nuts (cashews, almonds, pistachios of your choice), more cardomom powder and mix well. Garnish with pistachios crumbles, cardomom powder and saffron strands.
