I show you a delicious, simple one pan dish using one of the most tasty fish out there! Parmesan Crusted Fish With Asparagus and Potatoes Ingredients 2-4 fish filets Asparagus 4-6 small gold potatoes Olive oil 2 cloves Garlic 1 Tsp Rosemary 1/2 Tsp Dried Oregano 1/2 Tsp Dried Thyme 1 Tsp Dried Parsley Salt/Pepper Panko Bread Crumbs Parmesan Cheese 1 Egg Recipe Preheat oven to 425 degrees Cut hard stems off asparagus and add to ziploc bag with 2-3 Tbs olive oil, garlic, 1 Tsp salt and 1/2 tsp pepper, seal bag and toss to evenly coat, set aside Cut potatoes into small, even size pieces and add to ziploc bag with 2-3 tbs olive oil, rosemary, oregano, thyme and 1 tsp salt and 1/2 tsp pepper, seal bag and toss to evenly coat,. Place to one side of foil lined sheet tray in single layer. Put in oven for 10 minutes While potatoes are cooking, whisk egg in a bowl and add parsley. Salt and pepper fish, and dredge each filet in the egg then coat with bread crumbs, set aside When potatoes have cooked for 10 minutes, remove from oven and add fish and asparagus to sheet tray, with the fish in the middle. Top fish with Parmesan cheese. Return to the oven for 15-20 minutes or until internal temperature of fish reaches 145 degrees Enjoy!
