Sweet tahini rolls, or tahinov hatz, are an Armenian tahini bread popular in Lebanon. We fill and roll pita dough with LOTS of tahini and sugar. I've also added cinnamon with the tahini and sugar into the pastry. To replace eggs and butter, many Greek Orthodox cultures bake with tahini for their Lenten treats, making them naturally vegan. Lucky for us, it tastes amazing. I love this sweet tahini pastry with super strong coffee. The recipe makes a lot and the pastries keep fresh for a couple weeks. Recipe summary: bloom yeast in water for 10 minutes. Stir together dry bread ingredients. Stir in bloomed yeast water until shaggy. Knead dough until shiny and elastic. Cover in a bowl and let rise for 2 hours or until doubled in size. Halve dough and roll out into large circle. Spread half a cup of tahini just within an inch of the dough border. Pour on half of the sugar mixture. Roll the dough into a long piece (see video), then cut into 4-6 slices. Roll each slice again. Then curl into a swirl, and smash flat.
