Recipes below- TARATOR - Prepare ahead of time INGREDIENTS: ¼ c tahini 1 T lemon juice 2 C Yogurt ½ T grated garlic Salt and pepper METHOD: In a bowl add all tahini and lemon juice. Whisk to combine. Don't be surprised if it gets a bit thicker. Add ½ cup of yogurt and whisk into the tahini mixture until smooth. It will get thicker. Add remaining yogurt ½ c at a time. Whisk until smooth after each addition. Add water 1T at a time until sauce is pourable Add grated garlic, and season with salt and pepper CUCUMBER & TOMATO SALAD - Prepare ahead of time INGREDIENTS: 1 c diced English cucumbers 1 c diced Tomatoes ¼ c chopped parsley, fresh ¼ c Extra Virgin Olive Oil Lemon juice to taste Salt and pepper METHOD: 1. Combine all ingredients and season with salt and pepper. 2. Allow to sit and marinate for a minimum 30 minutes. SHAWARMA SPICE MIX INGREDIENTS: 1/2 T Cumin, whole 1/2 T Caraway, Whole 1/2 T Cardamom, Whole 1/2 T Oregano 1/2 T Cinnamon, ground 1/2 T Nutmeg, grind fresh 1/2 T Black Pepper, grind fresh 1/4 T Cayenne 1/4 T Ground Dry Ginger METHOD: 1. For whole spices, lightly toast in a sauté pan until they become fragrant 2. Grind freshly toasted spices in a coffee grinder or in a mortar and pestle 3. Combine with other spices and seal in a airtight container until needed SHAVED STEAK INGREDIENTS 1 Package Bertolino Foods Shaved Steak 2 T Vegetable Oil 4 Pitas METHOD: Heat your frying pan with oil on a medium to high heat Add your marinated Shaved steak to the pan in small batches for 2-3 minutes at a time. Move cooked shaved steak to a separate plate Grill or toast your pitas and open them up. Layer your cooked marinated shaved steak with Tarator sauce and Cucumber Tomato Salad to your liking
