Finally, with the arrival of spring and the Iranian New Year (Nowruz) , we're back—with some beautiful changes that you can see! 😍 As per our annual New Year's Eve dinner tradition, I made white fish again, but this time using the Malata method. Malata is a traditional way of preparing fish, where Caspian white fish (Caspian kutum) is placed on a special Malata skewer, seasoned with sour orange juice (or cooked sour orange juice), a bit of salt, and pepper, then grilled over charcoal. Caspian white fish (Caspian kutum) has incredibly delicious meat, but since it has a lot of bones, it's best enjoyed by hand. Don’t forget fresh garlic when eating Malata grilled fish! 😊 Pasha and I hope that every beautiful moment we captured touches your soul.
