INGREDIENTS FOR THE FRITTER 2 tbsp (11 g) whey protein powder vanilla 2 tbsp (11 g) casein protein powder vanilla 3 tbsp (18 g) oat flour 1 tbsp (9 g) tapioca flour or cornstarch ¼ tsp (1 g) baking powder ½ medium (60 g) apple 1 tbsp (14 g) butter ¼ cup (50 g) plain nonfat Greek yogurt 1 tsp (4 g) cinnamon 1 tbsp (15 g) brown sugar FOR THE FROSTING 3 tbsp (25 g) powdered sugar 1 tsp (5 ml) milk INSTRUCTIONS FOR THE FRITTER 1. NOTE: If you have the pancake mix from the protein pancakes premade (which you should 😎) you can measure out 50g of it and use it here. 2. Mix all of the dry ingredients for the fritter together so no clumps remain. 3. Cut the butter into small pieces and press it into the flour mixture with a fork until it is incorporated. 4. Add in the apple and Greek yogurt and mix until completely hydrated. 5. Cut out two rectangular pieces of parchment paper about 5 inches by 3 inches. Spray lightly with oil. 6. Divide the dough into two halves and spread out on each piece of parchment. 7. Preheat your air fryer to 325°F on the air fry setting for 15 minutes. 8. Spray the top of each fritter with oil and add to the air fryer. You could probably bake these but I would guess they will come out more bread like if you do. It may take longer in the oven. 9. Keep an eye on the fritters and flip them over about half way through or when the top has browned evenly. FOR THE FROSTING 10. Mix the powdered sugar and milk together. 11. Top each fritter with frosting.
