What can I say these are a taste of summer in your mouth, these raspberry Eclairs will not disappoint. Use Raspberries that are in season to maximise the flavour. I do recommend adding some lemon zest as this cuts through the sweetness of the icing and really perks up the overall flavour of the Eclair. I love making choux pastry and there is something so satisfying when you see them 'puff' up in the oven. Be sure to sprinkle water over the tray before baking as this helps create the steam which helps the Eclairs to rise.
