Quick Greek Bread Salad Recipe Dakos is a little known, kind of Greek salad, well, it's actually from Crete. It's a simple to make and absolutely delicious. And all it is, is bread, olive oil, and tomatoes topped with cheese. Ingredients 2 barley rusk or dried bread 2 tomatoes 1 tbsp olive oil 1 cup feta cheese 1 cup Greek yogurt 1 handful of oregano 1 tsp chili flakes 1 tbsp honey salt pepper juice of half a lemon First we are going to start with a cup of feta cheese and a cup of Greek yogurt. Dakos actually uses mazrita cheese, but it's not that easy to find unless you have a really great Greek grocer, so we are making our own substitute. If you can find it though, you can always use the mazitra. Add 1 tbsp of chili flakes for a little spice. This is optional if you don't like heat. Grind in 1 tsp pepper and mix until smooth and well combined. Next, we are going to grate two large tomatoes, discarding the skin. We just want the soft insides. Place your grated tomatoes into a bowl, adding in a tbsp of honey, 1\2 tsp salt, and the juice of half a lemon. You can also add in the zest of one lemon, some black pepper, 1 tbsp olive oil, a hand full of fresh oregano (or a tsp of dried if you don't have any fresh). Mix to combine everything. Place two barley rusks on a plate. If you can't get barley rusks, just take some bread and leave it out overnight, or you can bake it in your oven. But you want a dry, hard piece of bread for this job. Now, drizzle with olive oil. Top with the tomatoes and feta cheese mixture.
