Vibrant and piquant, this lemony bowl of pasta is light yet satisfying. Serve with a side salad or grilled meat for a complete meal or enjoy all on its own as a light, vegetarian dinner. Pasta al Limone Serves 4 Five in 25 Five Ingredients 1 large lemon 4 T unsalted butter ¾ lb. pasta of choice 8-10 basil leaves Freshly grated parmesan cheese (to taste) From the Pantry 2-3 garlic cloves, minced 1 T olive oil Add the butter to a bowl along with the zest and lemon juice. Cook the pasta just shy of the package directions in boiling, salted water. Add the oil to a skillet over medium heat. Add the garlic and sauté for 1 minute. Add the cooked pasta along with some cooking liquid. Add the butter, lemon zest and juice. Turn heat to low and stir vigorously to emulsify the butter and pasta water. Add more pasta water as needed until you reach your desired sauce consistency. Sprinkle in grated cheese to taste. Season to taste with salt and pepper. Fold in basil leaves off heat. Serve garnished with more basil leaves and cheese and a wedge of lemon. Serve with a side salad and/or perfectly cooked protein on top.
