Don’t let the grey mountains fool you. Amongst them, an emerald green Olive Oil Politeia is hidden, with a history of at least 4000 years, going back to the Minoan times. Crossing the semi- mountainous landscape in the easternmost part of Crete, during the summer, one sees the wild bushes and thinks that the land is barren, but soon, an oasis emerges. 35 km from Sitia and just 7 km from the coastal settlement of Kato Zakros, in dense olive groves, surrounded by mountains, is Zakros. Part of Sitia Geopark and protected area of the European Ecological Network Natura 2000, the area has an impressive geomorphology and biodiversity. In Zakros you will find natural springs with crystal clear waters, breathtaking gorges, paleontological findings and the fourth largest Minoan palace of Crete, the Palace of Kato Zakros. Humans are the most important revelation, however. The inhabitants of Zakros love their place, they cooperate in solidarity and exchange views aiming towards the continuous evolution of their village in both trying and happier historical times. Their activity has turned Zakros into an "Olive Oil Politeia", a community dedicated to olive growing with a constant evolution of knowledge, equipment and procedures. This Minoan land is not only recorded in the history of the region, as an important administrative and commercial center of the Minoan fleet 4000 years ago, but it is alive today. It produces our own ideal, the olive oil, a historic good that flows infinitely. The relationship between the earth, man and the olive tree, extends beyond the boundaries of a professional activity, it is connected with our personal history and culture.
