Hungarian Goulash (Gulyas) Soup Ingredients for 2 people: 1 ½ lbs. beef or pork, cut in bite-size pieces 2 small onions, chopped 4 cloves garlic, minced 2 carrots, cubed 2 potatoes, cubed 2 medium tomatoes, cut into small pieces 1 red or green bell pepper, cut into small pieces (I skipped adding bell peppers, because my husband doesn’t like them) 1 cube beef bouillon(optional) or beef broth Water Oil or pork lard Spices: Salt, pepper to taste Caraway seeds, ½ tsp crushed or whole Marjoram, 1 tsp Paprika, 2 tablespoons 2 bay leaves Dumplings: 1 egg 4 or 5 tablespoons flour A pinch of salt Cooking directions: Add 1 tablespoon oil or lard to a pot, then add the onions and sauté them for about 1 minute. Add salt, pepper, marjoram and the caraways seeds and stir well. Add the meat and cook it for about 1 minute, then carefully remove the pot from the heat and add 2 or 3 tablespoons paprika. This step is necessary, because paprika can burn easily and turn bitter. Place the pot back to the heat and add water to cover the meat, put the lid on and cook until the meat is tender on medium heat (for about 1 to 2 hours). When the meat is tender, add the broth or bouillon, bay leaf, carrots, tomatoes and potatoes and cook for another 20 minutes. Dumplings: Add 3 or 4 tablespoons flour and a pinch of salt to the egg and combine well. Add more flour, as needed, until you form a firm dough. With your fingers pinch small dumplings and dust them with flour so they cannot stick together. Add the dumplings to the soup, stir well and cook for another 5 to 10 minutes on medium heat, or until the dumplings are fully cooked. Serve the soup hot, with fresh bread, hot peppers and LOVE.
