Welcome to Episode 2 of my Diwali Special Series! 🪔✨ Today, we’re making a festive favorite — Chivda! A crunchy, flavorful mix of roasted poha, nuts, spices, and a hint of sweetness — this snack is a must-have for every Diwali celebration. It’s super easy to make, stays fresh for days, and tastes absolutely divine with your evening tea! ☕💛 🥣 Ingredients: Thin Poha (flattened rice) – 1kg Oil – 4 to 6 tbsp Cashew nuts (broken in half)– 250gms Peanuts – 250gms Sliced dry coconut – 250gms Split Bengal gram (Daaliya) – 200gm Raisins – 100gm Mustard seeds – 2 tsp Green chillies – ½ cup (chopped) Curry leaves – ½ cup Turmeric powder – 2 tsp Asafoetida (hing) – ½ tsp Fennel seeds – 2 tsp Coriander seeds – 2 tsp Salt – as per taste Powdered sugar – 2 tbsp 📝 Step-by-Step Recipe: 1️⃣ Take thin poha and roast it lightly on low flame till it turns crisp. Keep stirring continuously and set aside once done. 2️⃣ In a pan, heat 4–5 tbsp of oil, add cashew nuts, and fry till golden brown. Remove and set aside. 3️⃣ Repeat the same process for peanuts, sliced dry coconut, and split Bengal gram (chana dal) — frying each till crisp and golden. 4️⃣ Add raisins next and fry briefly till they puff up. Remove and set aside. 5️⃣ In the same oil, add mustard seeds, green chillies, and curry leaves — let them splutter. 6️⃣ Add turmeric, asafoetida, fennel seeds, and coriander seeds. Mix everything well. 7️⃣ Now, add all your fried ingredients back into the pan and give it a good mix. 8️⃣ Add salt to taste and 2 tsp powdered sugar for that perfect balance. 9️⃣ Finally, add your roasted poha, mix everything evenly until combined — and your Diwali Chivda is ready!
