On this episode of Plate It Perfect®, Callie shows you how to make a challenging cheesecake recipe simple by making bite-sized portions into a perfect party dessert! Subscribe for new episodes every Wednesday! / @popkitchen Recipe: Cheesecake Bites (12) Crust: • 1 cup ground graham crackers • 1 TBSP brown sugar • 5 TBSP melted unsalted butter Filling: • 8oz cream cheese softened • ½ cup sugar • 2 tsp vanilla extract • 1 cup heavy whipping cream Topping: • Melted chocolate • Strawberry To make the crust: • In a small bowl combine graham cracker crumbs, 1 tablespoon brown sugar and melted butter. Mixture should have the consistency of wet sand. • Line a mini muffin pan with muffin wrappers and spray with cooking spray. • Place 1 ½ tablespoons into the bottom of each mold. Press the mixture down firmly to form the crust. Prepare the filling: • Meanwhile, in the bowl of a stand mixer, beat cream cheese and sugar together until light and fluffy, about 3 minutes. Stir in vanilla extract. • In a separate bowl, whisk heavy cream until soft peaks form. • Fold whipped cream into cream cheese mixture until fully combined. Make the cheesecakes: • Put filling in piping bag and pip the crusts with filling, then smooth out with spoon. Refrigerate 4 hours or until completely set. • When ready to serve, top each cheesecake with chocolate sauce, and a chocolate covered strawberry.
