I was extremely lucky to be able to track down Industrial engineer and Technical Lead Designer behind the AMAZING San Remo X1 grinder. just looking at this machine gives me butterflies in my stomach and I can't wait to get my hands on a version in my cafe to really test it out. The tech behind it is absolutely phenomenal. If you don't know how San Remo work, they start with the very best ideas at the top end of the market - they fit all their technology into one super high end machine and then slowly let the tech trickle down to meet each segment of the market. Take a look at The RACER and OPERA 2.0 commercial espresso machines and then look at how the tech flows down to the San Remo YOU and then the Cube and you'll understand what I mean. This is probably the most advanced commercial grinder on the market today: A dual hopper grinder with an extra continuous bypass hopper at the front for single dosing or grinding a quick 250g for a customer. Inside is a chamber that predoses the weight of beans (unlike the predosing of grinds which go inert 1000x more quickly) and gets them ready to be ground within seconds using their FREAKING MASSIVE 98mm vertical flat burrs. Surely, this sets the bar of where home coffee grinders will go soon, and expect San Remo to be pumping out some amazing grinders for all your home baristas soon.
