Soft & Spongy Khaman Dhokla Recipe 😋Instant Steamed Gujarati Snack👌 Make super soft, fluffy, and perfectly spongy Khaman Dhokla at home with simple ingredients. This instant dhokla recipe is light, healthy, and perfect for breakfast, tea time, or as a party snack. No fermentation needed! 📝 Ingredients For Dhokla Batter: Besan (Gram flour) – 1 cup (150 g) Turmeric powder – 2 pinches Salt – ¼ tsp Powdered sugar – 1½ tsp Lemon juice – from ½ lemon (mixed with water) Ginger (grated) – ½ inch Green chillies – 2 (finely chopped) Suji (Semolina) – 1 tbsp Oil – 2 tsp Water – as needed Eno – 1 sachet (mixed with little water) For Tempering: Oil – 1 tbsp Mustard seeds (Rai) – ½ tsp Hing (Asafoetida) – 2 pinches Green chillies – 3 (slit) Curry leaves – few Water – 1½ glasses Salt – 3–4 pinches Sugar – 1 tbsp Lemon juice – from ½ lemon For Garnish: Fresh coriander leaves (chopped) 👩🍳 Method In a bowl, add besan, turmeric, salt, powdered sugar, lemon water, grated ginger, and chopped green chillies. Mix well. Add little water and mix to form a smooth batter. Add suji and oil. Whisk nicely for 3–4 minutes. Rest the batter for 10 minutes. Add eno with little water and whisk again for 2–3 minutes until the batter becomes light and airy. Boil 2 glasses of water in an idli kadhai/steamer. Grease the dhokla plate with oil. Pour the batter into the plate (consistency should be neither thick nor thin). Tap gently to remove air bubbles. Cover and steam for 12–15 minutes on medium flame. Check with a toothpick; if it comes out clean, dhokla is ready. Let it cool slightly. For Tempering: Heat oil in a pan, add mustard seeds. Add hing, slit green chillies, and curry leaves. Add water, salt, and sugar. Let sugar dissolve, then turn off the flame. Once the tempering water cools, add lemon juice and mix well. Cut the dhokla into square pieces, place on a serving plate, pour tempering evenly, garnish with coriander leaves.
