Kheer Recipe 👇 Kheer is a classic Indian rice pudding that is rich, creamy, and comforting. To prepare it, you will need 1/4 cup basmati rice (soaked for 20–30 minutes), 1 liter full-fat milk, 2 tablespoons ghee, 1/4 cup sugar (or to taste), 1/4 teaspoon cardamom powder, 2 tablespoons cashews, 1 tablespoon raisins, and a few strands of saffron soaked in 1 tablespoon warm water. Begin by heating a pan and adding 1 tablespoon of ghee; once warm, roast the cashews and raisins until golden and aromatic, then remove and set aside. In the same pan, add the remaining ghee and sauté the soaked rice for a few minutes to lightly fry and enhance its flavor. Pour in the milk and bring it to a boil, then reduce the heat and let it simmer, stirring occasionally so the rice cooks thoroughly and the milk thickens. Add the sugar and cardamom powder, and continue to cook until the mixture reaches a creamy consistency. When the kheer is almost ready, stir in the roasted dry fruits and the saffron water, and cook for a few more minutes to allow the flavors to blend.
