VEG MANCHURIAN RECIPE Ingredients: For the Manchurian Balls: 2 cup grated cabbage 1 cup grated carrots 1 cup grated cauliflower 1 cup finely chopped capsicum 2-3 all-purpose flour Salt to taste 1/2 teaspoon black pepper powder 6 tablespoon cornflour 6 tablespoon all purpose flour (maida) Oil for deep frying For the Sauce: 3-4 tablespoons oil 1 tablespoon finely chopped garlic ½ tablespoon finely chopped ginger 3-4 green chilies, finely chopped ½ cup finely chopped spring onions (white part for cooking, green part for garnish) ½ cup finely chopped onion 2 tablespoons soy sauce 1 tablespoon vinegar 1 tablespoon chili sauce (adjust for spice preference) Salt and black pepper to taste ½ teaspoon sugar 1 cup water 1 tablespoon cornflour mixed in 2 tablespoons water (for thickening) ½ cup fresh spring onion for garnish Instructions: Step 1: Prepare the Manchurian Balls Mix Vegetables: In a bowl, combine the grated cabbage, carrots, capsicum, and cauliflour. Add salt and black pepper. Mix it well. Add all purpose flour and cornflour. Mix well to form a sticky mixture. You can adjust the amount of flour if the mixture isn’t binding well. Shape: Take small portions and shape them into balls. Fry: Heat oil in a pan and deep-fry the balls on medium heat until they are golden and crispy. Set aside on paper towels to drain excess oil. Step 2: Make the Sauce In a separate pan, heat 3-4 tablespoons of oil. Add garlic, ginger, green chilies. Sauté for a minute until fragrant. Add white part of the spring onions. Sauté for 3-4 minute on medium heat. Add soy sauce, vinegar, chili sauce and. Mix well. Add salt and black pepper and sugar. Mix well. Simmer: Pour in 1 cup of water and let it come to a boil. Thicken Sauce: Stir in the cornflour slurry, and cook for a couple of minutes until the sauce thickens to a slightly glossy consistency. Add Manchurian Balls: Gently add the fried Manchurian balls to the sauce and toss until they’re coated. Garnish: Garnish with the green part of the spring onions. Serve: Serve hot with fried rice, noodles, or enjoy as an appetizer.
